- Veggie Love. About 10 calories per sprout and a good source of dietary fiber, vitamin D and folic acid.
- Glucosinolates. High levels of health-promoting compounds called glucosinolates - with antioxidant properties, and proven health benefits in the area of cancer prevention.
- Vitamin C. Brussels sprouts have three times the level of vitamin C of an orange.
- Plant Protein! Brussels sprouts are a good source of protein. Four sprouts have 3g protein! So if you eat like ten sprouts, you are getting about 7g protein. Not too shabby.





Steaming Sprouts? When I first heard about preparing Brussels sprouts by steaming them in the microwave, I will be totally honest, I was not on board! My favorite way to prepare them has always been to roast them until they are caramelized, tender and crispy and blackened on the outside. So microwaving seemed really strange! Until I tried it.

The benefits of steaming your sprouts in the microwave:

- Super fast! You can have a healthy veggie side prepared in under five minutes. Roasting sprouts can take at least 20-30 minutes, or longer, depending on how large your sprouts are.
- Less clean-up. You just steam the sprouts in the bag and pour them into a serving bowl. No pans to clean.
- Tender! The first time I steamed my sprouts in the microwave, I was blown away by how tender and green they became. I simple added a light dressing and consumed right away.
- You will probably eat more sprouts. For busy weeknights, the Ocean Mist Season and Steam packs are a dream. You will absolutely be able to add a hearty green veggie side dish to whatever you are making for dinner. So even if you do not feel like turning your oven on or cleaning a skillet, you can have Brussels sprouts! The biggest challenge for veggies === actually buying + making + eating them. I also experimented with steaming the whole sprouts. They were so tender and delicious! I added some oil, apple cider vinegar, salt and pepper and cranberries right to the bag before steaming. The vinegar can slightly darken some of the outer leaves, but in general, they were so green and perky..


Tips for Success:

- Try not to oversteam. Only cook until your veggies are steamed to perfection. This might take some trial and error with your own personal microwave situation. Oversteaming can upset the texture of the veggies and sometimes make them a bit more aromatic.
- Season, season season. Veggies taste best with a bit of seasoning. Simple things like salt, pepper, olive oil, lemon juice, vinegar, maple syrup, dressings and marinades and more. Even vegan cheese or nutritional yeast sprinkles on top! The cool thing about the Ocean Mist Seasona nd Steam bags is that you can open the bag, add some seasonings, then reseal before popping in the microwave.
- Finish in a skillet, if desired. If you really want those crispy edges on your sprouts, you can totally get them in half the time by steaming first. Steam, then finish the sprouts in a skillet or oven roasting pan with some olive oil.
- Cooking Time Tip. For this salad: if you want a more wilted and tender salad, steam the shreds in the microwave for at least three minutes. For crunchier shreds, you can go down to about the two minute mark. Start low and add more time if needed.

But Kathy, I do not want to use my microwave! That's fine! You can still buy these luscious veggies and use them in the oven or skillet. You do you! And you can absolutely make the recipe below by wilting the Ocean Mist Farms Supershreds Superfood Brussels Sprouts in a skillet instead.





Holiday Salad. I love this salad because it gives you the perfect combo of tender Brussel sprouts shreds, alongside hearty crunchiness from chopped walnuts, hemp seeds and some of the larger sprout shreds stay a bit crunchy too. The flavor is a bright and peppery maple flavor. The avocado and olive oil coats everything and makes the salad nice and luxurious. The citrus adds juiciness and sweetness. And those hemp seeds add a nice boost of plant protein.

Wilted Maple-Citrus Brussels Sprouts Salad with Walnuts

This fast and flavorful salad is a delicious way to serve super healthy Brussels sprouts! With citrus, avocado, walnuts and hemp seeds. Maple citrus dressing.

Ingredients

  • 12oz Ocean Mist Farms (Season and Steam) Supershreds Superfood Brussels Sprouts Shreds
  • 3 medium satsumas or tangerine, peeled and sliced
  • 2 Tbsp hemp seeds
  • 3/4 cup raw walnuts, chopped or whole
  • 1 small avocado, diced
  • Optional: vegan Parmesan cheese to taste, or try nutritional yeast sprinkle
  • Dressing/Marinade:
  • 2 Tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 Tbsp maple syrup
  • 1 Tbsp extra virgin olive oil

Instructions

  1. Open the Season and Steam Brussels sprouts bag. Add the salt and pepper. Toss a bit to distribute. Reseal bag.
  2. Pop the bag in the microwave for 2-3 minutes. Two minutes for more crunchy shreds, and three minutes for more tender wilted shreds.
  3. Open the steamed bag, pour into a large mixing bowl. The shreds should be tender and green. If desired, you can use some kitchen shears to cut any larger slices of the sprouts - this is optional though.
  4. Add the maple syrup, cider vinegar and olive oil. Toss well to allow the liquid to mingle with the warm shreds. Then add in all the remaining ingredients, walnuts, hemp seeds, avocado, satsumas. Toss gently.
  5. Pour into a serving bowl and top with vegan Parmesan to taste.

Yield: 6 servings

Prep Time: 00 hrs. 05 mins.

Cook time: 00 hrs. 03 mins.

Total time: 8 mins.
