I love Cinco de Mayo because it gives me an excuse to go all out on my favorite Mexican-inspired recipes.

On the Menu: A pitcher of fruity, fizzy red sangria, a few sauteed sweet plantains, a big bowl of spicy guacamole, salsa verde, fluffy red rice and maybe a zesty lime-scented Fiesta salad - sweet corn cake and some simmering black beans on the side.
