Fresh Pineapple and a few Pink Ladies. What to do with that other half of fresh pineapple that you couldn't finish yesterday morning? Make white sangria! A lot of recipes simply use pineapple juice for white sangria. (Buzzer sound!) No way! I don't even use a drop of pineapple juice. I use fresh chopped pineapple, a lot of mixing and marinating, and the taste is pineapple-tabulous. And the healthy pineapple enzymes and nutrients make it all the better. Also, my apple of choice here is a Pink Lady apple. But any sweet tart apple will do. But the pinkies just look so darn pretty in my glass.

Premium Sangria. I like to think that I am the Queen of premium sangria. It is a myth that sangria only needs the cheapest of wines and the crummiest of fruit. I am famous for using up to $25-$40 bottles of wine to...make sangria. I call it 'premium sangria'. That's the only way I got away with it. I also like to use a very good brandy. Just a small dash goes a long way. And of course I always use the very best fruit ingredients in my sangria. No day-old waxy spotted apples here! Only sweet, ripe, preferably-organic fruit for my premium sangria. (And no, you don't have to use a $40 bottle.)

Red or White Sangria? It's true that most people prefer red sangria over white. And I used to agree. But recently I've been experimenting with white sangria flavors and I'm hooked! White sangria can have a light, tropical flavor that is even easier to drink than red sangria. The trick is to make sure that the flavors are complex enough where your palate isn't bored thinking "is this white grape juice mixed with alcohol?" That's not a good sangria recipe. But my Fruity Fizz White Sangria is fabulous. So check it out...


Fruity Fizz (Premium) White Sangria
vegan, makes one pitcher

1 1/2 cups fresh pineapple, chopped into small cubes
1 apple, chopped into smaller cubes
1/3 cup peach nectar
3-4 cups white wine
*I like pinot grigio
1 shot brandy
1/3 cup citrus spritzer
*I used a Izze's Clementine spritzer
3 Tbsp simple syrup or maple syrup
2 limes
1/2 tsp sea salt
1/2 tsp cayenne (opt'l)
1/2 bottle champagne or sparkling white wine-for topping off each served glass. (Or 1 cup directly added to pitcher.)



Directions:
1. First, chop your fruit. You want small cubes. Small enough for the sangria to penetrate the fibers, but large enough so that it doesn't get mushy. I like a mix of tiny cubes and larger slices-these look so pretty in the pitcher.

2. Sprinkle the cayenne and salt over the fruit-any way you'd like

3. Add the apples to the pitcher.


4. Add the brandy to the pitcher. Stir a bit. Note: The brandy, salt and cayenne ingredients will bring flavor depth as well as help to break up the fibers in the fruit, releasing the fruit flavors and juices.

5. Add the pineapple.


6. Juice one lime, add it to the pitcher. Slice the other lime into circles. Add 1-2 circles to the pitcher, use the remaining slices as glass garnishes. Mix the contents well.

7. Next, add the white wine.

8. Add the peach nectar.

9. Add the simple syrup/maple syrup.

10. Using a long wooden spoon, stir the sangria very well. Mush through a few pineapple chunks and apples to marinate the sangria in fruity flavor.

11. Add the citrus spritzer. Stick the pitcher in the fridge and allow it to get nice and cold.

12. Serving: Fill each glass with 1-3 ice cubes, 2 tbsp of sangria fruit. Fill the glass 3/4 full with the sangria. Top off with the champagne.


*If you want to make it super self-serve and easy, simply add about a cup of champagne to the pitcher and let everyone pout their own drink.
A more elegant fizzy taste comes when you 'top off' with champagne though.
Garnish glasses with lime slices.
Straws are a must for mushing that yummy fruit and plucking it out to much.



Food/Snack Pairings: This is a sweet sangria that pairs very well with vegan cheese n crackers, sliced baguette crusty bread and guacamole and white corn chips.
Something with a bit of spicy bite compliments the warm sweetness of this sangria.
