Bio: Kathy Patalsky is a top vegan food blogger. Her blog Healthy. Happy. Life. aka LunchboxBunch.com was founded in 2007 and continues to lead the way in making plant-based meals look and taste amazing! Kathy also founded FindingVegan.com, a website which allows food bloggers to easily share their vegan recipes with a wide audience, via a browse-able photo gallery. Kathy is the author of the book 365 Vegan Smoothies published by Penguin/Avery in 2013. She is a California-raised girl who loves sunshine, farmer's markets, beach days, movie nights, animals big and small and all things cozy and lovely.

Hi guys! Welcome to HHL. Thank you so much for visiting!..
How it all began. I casually started this food blog in 2006 with no real clue what I was doing. I like food. And taking pictures. And writing. So this "blogging" thing sounded like fun. I was stumbling through a chaotic (yet exciting!) transition period in life when it all began. All at once: I was newly married. I scarily decided to drop out of Grad School since it wasn't making me happy. Plus, I abruptly left my full-time job, one I loved and co-workers i fell in love with. But changes were in order because my husband and I had a big move coming up.. DC -> NYC!
I started HHL about a year after we moved to downtown New York City. I was instantly inspired by the food culture of the city. I was thrilled to find so many plant-based-friendly restaurants, farmer's markets and brands. So into my kitchen I went. Creating and cooking just as I have always loved to do. But this time I pulled out my camera (then a tiny point-and-shoot) and started sharing my creations with the world. Or the one or two people who stumbled on my newbie food blog. As time went on I upgraded my camera and tried my best to teach myself food photography. I quickly learned that starting a blog or any website and building a loyal audience is not as easy as it sounds. Just starting out, all I had to motivate me was my inner passion. There was nothing real to grasp (readers, monetary value, social following, etc). But I could see the long-term vision for my blog, and I was devoted to giving 100% to this new path in life. Eventually it paid off. My goal for Healthy. Happy. Life. was to show everyone who would listen that vegan recipes are fun, diverse, satisfying and delicious!
Vegan Girl. My decision to go-vegan was inspired by my lifelong love of animals, as well as my affinity for wellness and healthy eating. As you will find from browsing my recipes, vegan food is crazy-delicious, but really, the best part about my vegan lifestyle is knowing that my diet aligns perfectly with the passionate love I have for animals, big and small.
Flash-forward to today. I am a published book author with two thriving websites that I am immensely proud of (Healthy-Happy-Life.com and FindingVegan.com) - and I get to make, eat and share my favorite foods and recipes with the world. I never thought I'd get here, but I did! I had no idea that my simple little food blog would evolve into my full time career and culmination of all my passions in life. Art. Food. People. Writing. Animals. Recipes. Wellness. Plus I am currently living in LA, sunny California makes me so happy.
Through Healthy. Happy. Life. I hope to inspire you to get in the kitchen and embrace your inner vegan chef. HHL is a resource for everyone, not just vegans. Curious to try? Even adding a few plant-based meals a week to your diet is a great place to start.
